At Vision Loss Resources’ Saint Paul location, there is a garden with a variety of vegetables and flowers, and it is doing great this summer. The Gardening Group had high hopes when they planted zucchini in May. This week, the Knitting Group, with Lyn Johnson, harvested the zucchini and made a delicious treat.
This week, participants took a break from their knitting needles and hit the kitchen. They shredded a large zucchini, whisked in two eggs and one cup of flour, and added minced chives and onion. Finally, they dropped scoops of this mixture into a hot pan with a little oil. Topped with parmesan cheese, sour cream, or salsa, zucchini fritters were a delicious taste of summertime.
